World’s smallest twice baked potatoes…

Part of my theory on a healthy diet is that you should not deny yourself what you love to eat.  Tonight with it still feeling like summer in Colorado, I wanted steak, corn, and twice baked potatoes (definitely not on the every day approved list).  But with a bit of “portion control” all things are possible.  The solution: five ounce sirloin with sauteed wild mushrooms, 1 ear of sweet corn, haricot verts, and perhaps the smallest twice baked potatoes ever created.  Look at them in comparison to the green beans…   Try this recipe from Bon Appetit  http://www.epicurious.com/recipes/food/views/Twice-Baked-Potatoes-with-Two-Cheeses-241642

but substitute six 1-2 oz baby potatoes and reduce all the other ingredients by 90% as well…

At least that’s what I did. :)
